Dry Fruit Pinnies #Laddoos ( Winter Recipe )

Whole wheat Dry fruit Pinnis are the ultimate choice to keep yourself protected during winters.
The ingredients are useful to enhance immunity and serve as an excellent option for all age
groups. Here’s the recipe


Ingredients


Whole Wheat Flour / Atta- 1 Kg
Clarified Butter / Desi Ghee- 350 g
Mixed Dry fruits (Cashew, almonds, pistachio, fox nuts, melon seeds, walnuts)- 1 cup
Gond/Edible gum/ Gum arabica- 1/4 cup
Dry coconut grated (or desiccated coconut)- 1/4 cup
Jaggery powder- 500- 750 g (as per taste)


Method of Preparation


1. In a pan, take some ghee and roast all the nuts separately to absorb the flavour and add
on crunchiness. Once cooled down, crush the nuts coarsely and keep aside.

2. In the same pan, add ghee and roast the edible gum. Once it becomes fluffy/ swell up,
turn off the flame. Allow it to cool down and churn to form powder. Keep it aside.

3. In the same utensil, roast the desiccated coconut and keep it aside.


4. Take a heavy bottom wide deep pan/kadai and add 1/4 cup of ghee in it. When ghee becomes hot then lower the flame and add the wheat flour in it. Stir fry the flour on low heat and keep stirring the flour continuously else it may burn from the bottom (You can add
more ghee if required). Keep stirring till the flour become nice golden in colour and start giving a nice aroma.


5. On the low flame, add the crushed nuts, the grated coconut and powdered edible gum.
Mix well and turn off the flame.


6. Now, add jaggery powder and mix well.

7. Make small size ladoos from the mixture and keep them on an already greased plate.

8. Store in an airtight jar after a few hours.


9. Heat them or enjoy directly with warm milk, every morning or evening to keep yourself healthy and strong during the winters.

Note:

1. Fry gond on medium to low heat, else it will remain raw from the centre and will
stick to teeth while eating.
2. You can use nuts or seeds as per the personal choice.
3. Roast the flour on low heat, frying on high heat may over roast the flour, giving a bitter taste.
4. While shaping the ladoos, if you have difficulty then add 2-3 tsp melted ghee in the mixture and then make ladoo.
5. Addition of ginger powder is also a good choice.
6. You can make any size of ladoo as per your choice.
